Strawberry Jello Pie

I was in the mood for strawberries and I wanted a light dessert.  This strawberry jello pie was the perfect answer. I modified this from an old family recipe by using less sugar and making the pie crust myself. I have also made this using mixed berries with blueberries, blackberries, raspberries, etc… as well as using different flavors of jello.

Ingredients:

1 sleeve reduced fat graham crackers

2 tablespoons extra virgin coconut oil melted

1 pint strawberries sliced

1/3 cup sugar

1 cup water

2 tablespoons white corn syrup

1 package sugar free strawberry jello

Directions:

  1. Preheat oven to 325 degrees.
  2. Add graham crackers to food processor.  Pulse until you have a fine crumb.
  3. Add melted coconut oil to the food processor.  Pulse to mix.
  4. Spread out the graham cracker crumbs in a pie pan. Press down gently.
  5. Bake 10 minutes.
  6. Slice the strawberries.
  7. Add water, sugar, and corn syrup to a medium saucepan.  Cook on medium heat until thickened and clear stirring often.  Add the jello mix.  Stir to combine.
  8. Add the sliced strawberries to the pie shell.
  9. Pour the jello mixture over the strawberries.
  10. Refrigerate to set for at least 4 hours prior to serving. 
  11. Enjoy! Optional top with whipped cream.
