Strawberry Jello Pie
I was in the mood for strawberries and I wanted a light dessert. This strawberry jello pie was the perfect answer. I modified this from an old family recipe by using less sugar and making the pie crust myself. I have also made this using mixed berries with blueberries, blackberries, raspberries, etc… as well as using different flavors of jello.
Ingredients:
1 sleeve reduced fat graham crackers
2 tablespoons extra virgin coconut oil melted
1 pint strawberries sliced
1/3 cup sugar
1 cup water
2 tablespoons white corn syrup
1 package sugar free strawberry jello
Directions:
- Preheat oven to 325 degrees.
- Add graham crackers to food processor. Pulse until you have a fine crumb.
- Add melted coconut oil to the food processor. Pulse to mix.
- Spread out the graham cracker crumbs in a pie pan. Press down gently.
- Bake 10 minutes.
- Slice the strawberries.
- Add water, sugar, and corn syrup to a medium saucepan. Cook on medium heat until thickened and clear stirring often. Add the jello mix. Stir to combine.
- Add the sliced strawberries to the pie shell.
- Pour the jello mixture over the strawberries.
- Refrigerate to set for at least 4 hours prior to serving.
- Enjoy! Optional top with whipped cream.
