Mango Macadamia Muffins

Mango, banana, and toasted macadamia nuts join together to create a delightful muffin.
Recipe adapted from Food Network
Ingredients:
1 ripe banana
1 mango
½ cup chopped macadamia nuts
2 tablespoons orange juice
Zest from 1 orange
3 large eggs
¼ cup unsweetened applesauce
½ cup unsweetened coconut flakes
1 cup whole wheat flour
1 cup almond flour
1 scoop vanilla protein powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
2 tablespoons coconut sugar
Directions:
- Preheat oven to 325 degrees. Spread macadamia nuts on a small pan. Roast for 10 minutes.
- In a large bowl smush a banana. Add chopped mango, orange juice, orange zest, eggs, and applesauce. Mix to combine.
- Add flours, protein powder, baking soda, salt, coconut sugar, and cinnamon and mix.
- Add toasted macadamia nuts and mix to combine scraping the edges of the bowl with a spatula.
- Increase oven temp to 350 degrees. Line a muffin tin with liners or spray with nonstick baking spray.
- Use a large cookie scooper or measuring cup to fill muffin tins.
- Bake for 20 minutes.
- Let cool on a wire rack for at least 10 minutes before removing muffins from tins.
- Store in an air-tight container.
