Peanut Butter Cookies with Chocolate Candy Toppings
I always make these cookies after Halloween. The traditional recipe for peanut butter cookies uses Hershey Kisses as the topping. I like to mix things up and use an assortment of chocolate candies such as Reese’s, Snickers, KitKat, Hershey Bars, Milky Ways, etc…
Ingredients:
1 cup all purpose flour
3/4 cup powdered peanut butter
1/2 teaspoon baking soda
1 cup granulated sugar
8 tablespoons unsalted butter at room temperature
2 large eggs
1 cup creamy peanut butter
1 teaspoon vanilla extract
Toppings: bite size Reese’s, Rolos, Snickers, Milky Ways, Kit Kats, etc…
Directions:
- Preheat oven to 375 degrees and line 1 or 2 baking sheets with parchment paper.
- Remove wrappers from candy toppers.
- Cream butter and sugar in a stand mixer.
- Spray a measuring cup with nonstick spray. Fill with peanut butter. Add peanut butter to stand mixer.
- Whisk flour, powdered peanut butter, and baking soda in a large bowl.
- Add eggs and vanilla extract to mixer and mix in.
- Gradually add in dry ingredients.
- Use a small cookie scooper to form balls. Space cookie dough balls 2 inches a part on the baking sheet.
- Bake for 10 minutes until firm.
- Immediately press chcolates on the top of the cookies.
- Bake cookies for 1 minute to slightly melt the chocolates.
- Let cookies cool on the baking sheet. After a few minutes slide the parchment paper off the baking sheet and allow to cool completely before transferring to an air-tight container.
