Fried Onion and A1 Meatloaf
This is meatloaf is packed with flavor, yet is still on the healthy side as I used extra lean ground beef, oatmeal, and shredded carrots to add nutrients to the filling. I used A1 sauce and topped with fried onions for a crunch.
Ingredients:
1 pound extra lean ground beef
1 cup old fashioned oats
½ cup shredded carrots
½ sweet onion finely chopped
1/3 cup A1 sauce plus more for topping
½ cup fried onions, plus more for topping
Directions:
- Add ground beef, oats, carrots, and onion to a large bowl and mix together to combine ingredients.
- Fold in the A1 sauce and fried onions.
- Spray a bread pan with nonstick spray and press mixture into the pan.
- Spread a layer of A1 on top of the meatloaf and sprinkle with more fried onions.
- Bake at 375 for an hour until internal temperature reaches 160.
- Note: I often prep this ahead of time and store in the refrigerator until I am ready to bake.
- Enjoy! I served this with roasted potatoes and sauteed green beans.
