Ingredients:

Cookies-

2 ¼ cups all purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

½ cup butter softened

½ cup granulated sugar

½ cup packed brown sugar

2 eggs

½ cup buttermilk

2 tablespoons evaporated milk

1 teaspoon baking soda

1 teaspoon white vinegar

1 teaspoon vanilla extract

1 ½ cups semisweet chocolate chips

Filling

2 ½ cups powdered sugar

1 cup unsweetened cocoa powder

1 cup butter softened

½ cup whipping cream

2 teaspoons vanilla

1 teaspoon salt

Directions:

Cookies-

  1. Preheat oven to 375 degrees. Line two large baking sheets with parchment paper.
  2. Combine flour, baking powder, and salt in a medium bowl.
  3. Beat ½ cup butter, granulated sugar, and brown sugar in a stand mixer on medium speed for 5 minutes until light and fluffy.
  4. Add eggs and buttermilk and beat until blended.
  5. Whisk evaporated milk, baking soda, and vinegar in a small bowl. Add to the butter mixture and beat on a low speed.
  6. Add vanilla and beat until blended.
  7. Add the chocolate chips and mix in scraping the edge of the bowl.
  8. Use a cookie scooper to form tablespoon size balls and arrange on the baking sheets at least 2 inches apart.
  9. Bake 10-12 minutes until cookies are just beginning to brown, but do not overbake.
  10. Cool on baking sheet for 2 minutes. Then transfer to a cooling rack and allow to cool completely.
  11. Flip over half of the cookies.

Filling-

  1. Sift powdered sugar and cocoa in a medium bowl.
  2. Beat butter in a stand mixer until light and creamy.
  3. Add powdered sugar mixture and beat until crumbly.
  4. Add vanilla and beat on high for 3 minutes until smooth and fluffy.
  5. Transfer filling to an icing tool or piping bag.  Use a medium or large tip to pipe filling onto half of the cookies. Gently press another cookie on top to make sandwich cookies.
  6. Store in an air-tight container.
  7. Enjoy!
