Chocolate Chip Whoopie Pies with a Whipped Chocolate Filling
What’s better than a chocolate chip cookie? Two chocolate chip cookies with a chocolate filling in the middle. These cookies are seriously to die for!
Ingredients:
Cookies-
2 ¼ cups all purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup butter softened
½ cup granulated sugar
½ cup packed brown sugar
2 eggs
½ cup buttermilk
2 tablespoons evaporated milk
1 teaspoon baking soda
1 teaspoon white vinegar
1 teaspoon vanilla extract
1 ½ cups semisweet chocolate chips
Filling–
2 ½ cups powdered sugar
1 cup unsweetened cocoa powder
1 cup butter softened
½ cup whipping cream
2 teaspoons vanilla
1 teaspoon salt
Directions:
Cookies-
- Preheat oven to 375 degrees. Line two large baking sheets with parchment paper.
- Combine flour, baking powder, and salt in a medium bowl.
- Beat ½ cup butter, granulated sugar, and brown sugar in a stand mixer on medium speed for 5 minutes until light and fluffy.
- Add eggs and buttermilk and beat until blended.
- Whisk evaporated milk, baking soda, and vinegar in a small bowl. Add to the butter mixture and beat on a low speed.
- Add vanilla and beat until blended.
- Add the chocolate chips and mix in scraping the edge of the bowl.
- Use a cookie scooper to form tablespoon size balls and arrange on the baking sheets at least 2 inches apart.
- Bake 10-12 minutes until cookies are just beginning to brown, but do not overbake.
- Cool on baking sheet for 2 minutes. Then transfer to a cooling rack and allow to cool completely.
- Flip over half of the cookies.
Filling-
- Sift powdered sugar and cocoa in a medium bowl.
- Beat butter in a stand mixer until light and creamy.
- Add powdered sugar mixture and beat until crumbly.
- Add vanilla and beat on high for 3 minutes until smooth and fluffy.
- Transfer filling to an icing tool or piping bag. Use a medium or large tip to pipe filling onto half of the cookies. Gently press another cookie on top to make sandwich cookies.
- Store in an air-tight container.
