Roasted Sweet Potatoes
When sweet potatoes are cooked properly, they taste amazing without any butter. I have a sweet tooth so I do enjoy a sprinkle of sugar and cinnamon on my sweet potatoes, but they honestly don’t need any extra sweetness.
Ingredients:
1-3 sweet potatoes
½ – 1 teaspoon extra virgin olive oil per potato
Salt
Directions:
- Preheat oven to 350 degrees and line a baking sheet with aluminum foil.
- Pierce each sweet potato with a fork a few times.
- Drizzle olive oil over each potato and rub to coat the entire potato.
- Sprinkle with salt if desired.
- Bake 45 minutes. Then flip potatoes over and cook for another 15-30 minutes until potatoes are easily pierced with a fork.
- Slice potatoes and the skin should peel right off. Serve as is or with your favorite toppings.
