Roasted Sweet Potatoes

<strong>Roasted Sweet Potatoes</strong>

When sweet potatoes are cooked properly, they taste amazing without any butter.  I have a sweet tooth so I do enjoy a sprinkle of sugar and cinnamon on my sweet potatoes, but they honestly don’t need any extra sweetness.

Ingredients:

1-3 sweet potatoes

½ – 1 teaspoon extra virgin olive oil per potato

Salt

Directions:

  1. Preheat oven to 350 degrees and line a baking sheet with aluminum foil.
  2. Pierce each sweet potato with a fork a few times.
  3. Drizzle olive oil over each potato and rub to coat the entire potato.
  4. Sprinkle with salt if desired.
  5. Bake 45 minutes.  Then flip potatoes over and cook for another 15-30 minutes until potatoes are easily pierced with a fork.
  6. Slice potatoes and the skin should peel right off.  Serve as is or with your favorite toppings.
  7. Enjoy!
