Sweet Potato Pie with Graham Cracker Crust
My son requested sweet potato pie with our Christmas Eve dinner this year. After researching several recipes I decided to combine a few to make this pie.
Ingredients-
Crust-
1 sleeve cinnamon graham crackers
2-3 tablespoons melted coconut oil
Filling–
2 large sweet potatoes
½ cup granulated sugar (I used truvia)
1 tablespoon extra virgin coconut oil
1 large egg
¼ cup milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Pinch of salt
Directions:
Filling–
- Preheat the oven to 350 degrees.
- Rub the sweet potatoes with olive oil and pierce several times with a fork. Place on a baking sheet.
- Roast for 60-90 minutes until potatoes can be pierced easily with a fork.
- Meanwhile make the crust.
Crust–
- Pulse graham crackers in a food processor until they are a fine crumb.
- Add the melted coconut oil and pulse until a wet sand like mixture.
- Press the crumbs into a pie plate.
- Bake 5 minutes.
Pie Continued–
- Let potatoes cool and then peel.
- Add potatoes to a stand mixer and mash.
- Add milk, eggs, vanilla, cinnamon, nutmeg, sugar, coconut oil, and salt and blend until smooth.
- Pour the filling over the cooled crust.
- Bake for 50-60 minutes.
- Let pie cool on a rack.
- Enjoy! My son liked his pie with whip cream on top.
