Sweet Potato Pie with Graham Cracker Crust

Sweet Potato Pie with Graham Cracker Crust

My son requested sweet potato pie with our Christmas Eve dinner this year. After researching several recipes I decided to combine a few to make this pie.

Ingredients-

Crust-

1 sleeve cinnamon graham crackers

2-3 tablespoons melted coconut oil

Filling

2 large sweet potatoes

½ cup granulated sugar (I used truvia)

1 tablespoon extra virgin coconut oil

1 large egg

¼ cup milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

Pinch of salt

Directions:

Filling

 1. Preheat the oven to 350 degrees.
 2. Rub the sweet potatoes with olive oil and pierce several times with a fork. Place on a baking sheet.
 3. Roast for 60-90 minutes until potatoes can be pierced easily with a fork.
 4. Meanwhile make the crust.

Crust

 1. Pulse graham crackers in a food processor until they are a fine crumb.
 2. Add the melted coconut oil and pulse until a wet sand like mixture.
 3. Press the crumbs into a pie plate.
 4. Bake 5 minutes.

Pie Continued

 • Let potatoes cool and then peel.
 • Add potatoes to a stand mixer and mash.

 • Pour the filling over the cooled crust.
 • Bake for 50-60 minutes.
