Grilled Cabbage Steak Salad with Chipotle Dressing
Grilled cabbage is a fantastic base for a salad. I topped my grilled cabbage with corn, bell peppers, and cherry tomatoes.
Ingredients:
1 green cabbage sliced into 1 inch steaks
1 teaspoon onion powder
1 teaspoon garlic powder
Olive oil spray
Cherry tomatoes
1 bell pepper sliced
1 cup sweet corn
Chipotle Dressing-
6 tablespoons plain nonfat Greek yogurt
1 chipotle pepper, 1 tablespoon adobo sauce
1 tablespoon honey
2 tablespoons lime juice
Directions:
- Preheat grill to high heat and spray with nonstick spray.
- Spray cabbage steaks with olive oil on both sides. Sprinkle with garlic and onion powder.
- Grill for 2-3 minutes per side.
- Add yogurt, chipotle, adobo sauce, honey, and lime juice to a food processor and pulse to mix.
- Top cabbage steaks with corn, bell peppers, cherry tomatoes, and chipotle dressing.
- Store any leftover dressing in the refrigerator.
