Honey and Mint Glazed Roasted Carrots

I love roasted carrots and when topped with honey and mint this makes for an incredible side dish.

Ingredients:

1 pound large carrots peeled and sliced in half lengthwise

2 tablespoons extra virgin coconut oil

3 tablespoons dark brown sugar

2 tablespoons honey

3 tablespoons chopped fresh mint

½ teaspoon salt

Directions:

  1. Preheat the oven to 400 degrees.  Line a baking sheet with parchment paper.
  2. Place carrots on the baking sheet.
  3. In a small saucepan melt the coconut oil over medium heat. Then remove the pan from heat.
  4. Add the brown sugar and honey.  Stir to combine.
  5. Pour the mixture over the carrots.  Sprinkle with mint and salt. 
  6. Roast carrots until tender and lightly golden 20-25 minutes.
  7. Enjoy! Garnish with more fresh min if desired.
