Honey and Mint Glazed Roasted Carrots
I love roasted carrots and when topped with honey and mint this makes for an incredible side dish.
Ingredients:
1 pound large carrots peeled and sliced in half lengthwise
2 tablespoons extra virgin coconut oil
3 tablespoons dark brown sugar
2 tablespoons honey
3 tablespoons chopped fresh mint
½ teaspoon salt
Directions:
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
- Place carrots on the baking sheet.
- In a small saucepan melt the coconut oil over medium heat. Then remove the pan from heat.
- Add the brown sugar and honey. Stir to combine.
- Pour the mixture over the carrots. Sprinkle with mint and salt.
- Roast carrots until tender and lightly golden 20-25 minutes.
- Enjoy! Garnish with more fresh min if desired.
