I remember eating tator tot casserole on a regular basis growing up.  As busy as our spring has been with activities and sports I needed a dinner I could throw in the oven and serve after I ran around town and picked kids up.  I prepped this on the weekend so it would be ready for a busy Monday night. 

Ingredients:

1 tablespoon extra virgin olive oil

1 pound lean ground turkey (or beef)

1 small yellow onion diced

1 green pepper diced

1 tablespoon Montreal steak seasoning blend

1 pound frozen mixed vegetables

Two 10 ounce cans reduced fat cream of chicken soup

1 pound frozen tator tots

2 cups shredded cheddar cheese

Directions:

  1. Heat olive oil in a large skillet.  Add onions and pepper and saute for 10 minutes. 
  2. Heat the ground meat in a separate skillet breaking up into small pieces.  Cook until browned.  Drain.
  3. Add the meat to the vegetables.  Mix together and add the Montreal steak seasoning.
  4. Spread the meat out in a 9×13 baking sheet.
  5. Spread frozen vegetables on top of the meat. 
  6. Pour chicken soup over the vegetables and spread out with a spatula.
  7. Sprinkle shredded cheese over the soup mixture.
  8. Arrange the tator tots in rows.
  9. Bake at 350 degrees for an hour.  If you prep and refrigerate you may need to bake for an additional 10-15 minutes.
