Cheesy Tator Tot and Veggie Casserole
I remember eating tator tot casserole on a regular basis growing up. As busy as our spring has been with activities and sports I needed a dinner I could throw in the oven and serve after I ran around town and picked kids up. I prepped this on the weekend so it would be ready for a busy Monday night.
Ingredients:
1 tablespoon extra virgin olive oil
1 pound lean ground turkey (or beef)
1 small yellow onion diced
1 green pepper diced
1 tablespoon Montreal steak seasoning blend
1 pound frozen mixed vegetables
Two 10 ounce cans reduced fat cream of chicken soup
1 pound frozen tator tots
2 cups shredded cheddar cheese
Directions:
- Heat olive oil in a large skillet. Add onions and pepper and saute for 10 minutes.
- Heat the ground meat in a separate skillet breaking up into small pieces. Cook until browned. Drain.
- Add the meat to the vegetables. Mix together and add the Montreal steak seasoning.
- Spread the meat out in a 9×13 baking sheet.
- Spread frozen vegetables on top of the meat.
- Pour chicken soup over the vegetables and spread out with a spatula.
- Sprinkle shredded cheese over the soup mixture.
- Arrange the tator tots in rows.
- Bake at 350 degrees for an hour. If you prep and refrigerate you may need to bake for an additional 10-15 minutes.
