Shrimp Pad Thai

Shrimp Pad Thai is without a doubt my favorite Thai food!  This is delicious and loaded with veggies.

Recipe adapted from Food Network

Ingredients:

2 pounds jumbo shrimp

1 bell pepper thinly sliced

1 shallot diced

1 cup snap peas

3 scallions diced

5 ounces flat rice stick noodles

2 tablespoons fish sauce

2 tablespoons brown sugar

2 tablespoons tamari sauce

3 tablespoons lime juice and zest from 1 lime

1-3 tablespoons siracha (I used 1 tablespoon)

1 tablespoon honey

2 tablespoons extra virgin olive oil

2 eggs lightly beaten

1 cup mung bean sprouts (I had these and forgot to get them out of the fridge)

Toppings: roasted peanuts or cilantro

Directions:

  1. Ensure all vegetables are diced and sauce is mixed before beginning to cook since this dish cooks quickly.
  2. Mix lime juice, fish sauce, tamari sauce, siracha, brown sugar, and honey.
  3. Sprinkle lime zest over shrimp.
  4. Bring water to a boil to cook the rice noodles. Cook rice noodles as the shrimp cook. 
  5. Heat 2 tablespoons olive oil in a large saucepan. Cook the shrimp and shallots over medium heat stirring often until pink begin to turn pink. 
  6. Add the beaten egg and stir often as it cooks. 
  7. Add the peppers, snap peas, and sauce.  Continue to cook for 3-4 minutes.
  8. Stir in the rice noodles. 
  9. Top with scallions, bean sprouts, peanuts, and cilantro.
  10. Enjoy!
