Shrimp Pad Thai
Shrimp Pad Thai is without a doubt my favorite Thai food! This is delicious and loaded with veggies.

Ingredients:
2 pounds jumbo shrimp
1 bell pepper thinly sliced
1 shallot diced
1 cup snap peas
3 scallions diced
5 ounces flat rice stick noodles
2 tablespoons fish sauce
2 tablespoons brown sugar
2 tablespoons tamari sauce
3 tablespoons lime juice and zest from 1 lime
1-3 tablespoons siracha (I used 1 tablespoon)
1 tablespoon honey
2 tablespoons extra virgin olive oil
2 eggs lightly beaten
1 cup mung bean sprouts (I had these and forgot to get them out of the fridge)
Toppings: roasted peanuts or cilantro
Directions:
- Ensure all vegetables are diced and sauce is mixed before beginning to cook since this dish cooks quickly.
- Mix lime juice, fish sauce, tamari sauce, siracha, brown sugar, and honey.
- Sprinkle lime zest over shrimp.
- Bring water to a boil to cook the rice noodles. Cook rice noodles as the shrimp cook.
- Heat 2 tablespoons olive oil in a large saucepan. Cook the shrimp and shallots over medium heat stirring often until pink begin to turn pink.
- Add the beaten egg and stir often as it cooks.
- Add the peppers, snap peas, and sauce. Continue to cook for 3-4 minutes.
- Stir in the rice noodles.
- Top with scallions, bean sprouts, peanuts, and cilantro.
