Creamed Lacinato Kale

Creamed Lacinato Kale

My mother in-law grew lacinato kale this year and graciously sent me home with bags of greens when we visited for Christmas. This dish is lightened up and packed with nutritious kale and spinach.

Ingredients:

1 pound lacinato kale (or other kale/green)

2 cups baby spinach

2 tablespoons extra virgin olive oil

1/2 cup nonfat milk

1/2 cup plain nonfat Greek yogurt

1/2 cup shredded Gruyere cheese

1/2 cup shredded Parmesan cheese

1/4 teaspoon ground nutmeg

1 tablespoon Worcestershire sauce

1/2 cup whole wheat panko breadcrumbs

optional: 1/4 cup crushed red pepper

Directions:

  1. Preheat oven to 350 degrees.
  2. Add olive oil to a large skillet and heat on high. Add 1/2 kale and sauté until bright green. Transfer kale to a 8×8 dish. Add remaining kale and sauté. Add cooked kale and spinach to an 8×8 dish. Mix together.
  3. Mix yogurt, milk, Worcestershire, and nutmeg. Pour over the kale and spinach.
  4. Top with shredded cheese and breadcrumbs.
  5. Bake 20-25 minutes.
  6. Enjoy!
