Chocolate Chip Cookie Dough Truffles

My kids favorite cookie is chocolate chip cookies so they went crazy over these truffles.  The recipe suggested microwaving the flour for 2 minutes to reduce the risk of food borne illness.

Ingredients:

2/3 cup (1 1/3 sticks) butter room temperature

¾ cup granulated sugar

¼ cup dark brown sugar

¼ cup applesauce

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 scoop chocolate or vanilla protein powder

½ teaspoon baking soda

½ teaspoon salt

1 cup mini semisweet chocolate chips

12 ounces semisweet chocolate chips

6 blocks chocolate almond bark

Directions:

  1. Beat the butter, sugar, brown sugar, applesauce, and vanilla together until smooth. 
  2. Whisk the flour, baking soda, protein powder, and salt together.
  3. Slowly add the dry ingredients to the mixer.
  4. Fold in the chocolate chips.
  5. Use a small cookie scooper to form balls.  Spread balls out on a baking sheet lined with parchment paper.  Freeze or refrigerate balls for an hour.
  6. Melt the semi-sweet chocolate chips and almond bark in a heavy bottomed saucepan over low heat stirring constantly. 
  7. Dip the balls in one at a time using a spoon and a fork.  Gently tap the fork a few times to help excess drip off the balls.  Then transfer to the baking sheet.
  8. If you are going to sprinkle with colored sugar or sprinkles do that immediately before the balls harden.
  9. Transfer balls to the refrigerator to set. Store in an airtight container in the fridge until the truffles disappear.
