Pulled Turkey Sandwich/Wrap
My family loves pulled pork BBQ sandwiches, so when I saw a recipe for pulled turkey sandwiches using turkey thighs I just had to try it. This simple crock pot dish topped with spicy lime coleslaw was a simple and delectable weeknight meal.

Ingredients:
4 turkey thighs
1 small red onion diced
1 tablespoon chili powder
1 teaspoon ground cumin
½ cup reduced sodium/sugar ketchup
¼ cup light brown sugar
2 tablespoons yellow mustard
1 tablespoon apple cider vinegar
Buns, wraps, sliced cheese, favorite BBQ sauce
Coleslaw-
1 16 ounce bag shredded cabbage/coleslaw mix
1/3 cup fresh lime juice
Zest from 1 lime
½ teaspoon ground cumin
1 teaspoon garlic powder
2 tablespoons buffalo sauce
¼ cup extra virgin olive oil
Directions:
- Spray crock pot liner with olive oil spray.
- Spread diced onions on the bottom of the pan.
- Top with turkey thighs. Rub the chili powder and cumin on the turkey thighs. Sprinkle with salt and pepper.
- Mix ketchup, sugar, mustard, and vinegar in a small bowl. Pour over the turkey thighs.
- Cook on low 8-10 hours or on high for 4-6 hours.
- Reduce heat to warm setting.
- The bones should fall off easily from the meat. Shred the meat with forks. Use a slotted spoon to remove turkey from the crock pot to place on sandwiches/wraps.
- Coleslaw- Add cabbage to a medium bowl. Sprinkle cumin, garlic powder, and lime zest on top. Pour lime juice, buffalo sauce, and olive oil. Then mix together. Refrigerate until ready to serve.
- Serve on buns or wraps with coleslaw, sliced cheese (Colby Jack or Pepper jack), and top with extra BBQ sauce.
