Cranberry Orange Oatmeal Muffins

These muffins are packed with flavor and a healthy way to start off your morning.

Ingredients:

4 cups old fashioned oats

1 ½ teaspoons ground cinnamon

1 teaspoon baking powder

½ teaspoon salt

2 cups unsweetened almond milk

2 tablespoons flax seeds

¼ cup coconut sugar or light brown sugar

2 teaspoons vanilla extract

1/3 cup pure or light maple syrup

1 cup cranberries

2 teaspoons orange zest

2 teaspoons orange juice

Directions:

  1. Preheat the oven to 375 and spray muffin tins with nonstick spray.
  2. Add almond milk, flax, maple syrup, vanilla extract, and coconut sugar to a large bowl.  Mix and allow to sit for 5 minutes.
  3. Add remaining ingredients.  Let sit for 10 minutes after mixing together.
  4. Use a large cookie scooper to fill muffin tins.
  5. Bake for 25-30 minutes.
  6. Allow to cool before removing from muffin tins.
  7. Store in an air-tight container.
  8. Enjoy!
