Veggie Chili

Veggie Chili

This is one of my favorite chili recipes.  It is loaded with veggies and full of flavor.  I make this in a slow cooker, but you could make it on a Dutch oven on the stove in less time. 

Ingredients:

1 sweet onion chopped

1 bell pepper diced

1 zucchini sliced and quartered

1 yellow squash sliced and quartered

1 can garbanzo beans rinsed and drained

1 can reduced sodium black beans rinsed and drained

8 ounces tomato sauce

1 15 ounce can diced tomatoes with peppers

1 15 ounce can diced/crushed tomatoes

1 tablespoon chili powder

1 teaspoon ground cumin

Toppings: shredded cheddar cheese, plain nonfat Greek yogurt

Directions:

  1. Spray crock pot with nonstick spray.
  2. Add all ingredients.   Mix well to combine.
  3. Heat on low for 6-8 hours.
  4. Serve in bowls with your favorite toppings.
