Mushroom and Veggie Quesadilla or Open Faced Tortilla
Cheesey mushrooms and veggies = Yum! This dish is simple to make, filling, and full of ooey gooey goodness.
Ingredients:
2 extra large tortillas or 4 whole wheat tortillas
2 cups kale
1 pound white mushrooms
1 bell pepper diced
½ onion sliced
1 jalapeno diced
1/2 cup shredded cheese
2-4 slices pepper jack cheese
1 teaspoon dried oregano
Directions:
- Spray a nonstick pan with olive oil spray. Add all vegetables to the pan. Spray with olive oil spray. Sprinkle with oregano. Cook on medium heat for 10 minutes mixing often.
- Preheat oven to 350 degrees.
- Place tortillas on a large baking sheet. Sprinkle with shredded cheese.
- Top tortillas with vegetables.
- Cut the pepper jack cheese into strips and place strips over vegetables.
- Bake 10-15 minutes until cheese is melted.
