Fig Bran Muffins
This was my first time making bran muffins and my first time using fresh figs in a muffin. These are sweet and full of healthy goodness.
Recipe adapted from Food Network
Ingredients:
1 cup fresh figs; 12-24 thin slices to top muffins and the rest diced
1 cup whole wheat flour
1 cup almond flour
1 scoop vanilla protein powder
1 ½ cups all bran cereal
1 cup unsweetened almond milk (or milk of your choice)
1 egg
¾ cup unsweetened applesauce
½ cup honey
1 tablespoon unsulfured molasses
1 tablespoon baking powder
½ teaspoon salt
Directions:
- Preheat oven to 350 and spray muffin tins with baking spray.
- Pour all bran cereal and milk in a bowl and allow it to sit.
- Add flours, protein powder, baking powder, and salt to a large bowl. Mix to combine.
- Add applesauce, honey, molasses, and egg. Mix to combine.
- Add cereal and milk. Mix to combine.
- Gently add in diced figs. Mix.
- Use a large cookie scooper to fill muffin tins.
- Press 1-2 thin fig slices on the top of each muffin.
- Bake 25-30 minutes or until toothpick inserted in the center comes out clean.
- Let cool on a wire rack for at least 10 minutes before removing.
- Store in an airtight container. Refrigerate if preferred.
