Creole Spiced Air Fried Okra

I remember eating okra as a child, but I had never cooked it myself.  I saw fresh okra at the produce stand, so I bought some and rushed home to start researching recipes.  I love my air-fryer, so I decided to try air fried okra as my first okra side dish.

Ingredients:

Okra-

½ pound fresh okra

½ cup fat free milk

½ cup all purpose flour

½ teaspoon paprika

½ teaspoon dried thyme

½ teaspoon salt

¼ teaspoon garlic granules

¼ teaspoon onion granules

¼ teaspoon dried oregano

¼ teaspoon ground black pepper

Pinch white ground pepper

Pinch cayenne

Olive oil spray

Sauce-

½ cup nonfat plain Greek yogurt

1 tablespoon hot sauce

Zest ½ lemon

1 teaspoon lemon juice

Directions:

  1. Slice the tops of the okra pods and slice them in half lengthwise. 
  2. Place okra in a medium bowl and toss with milk to coat.
  3. Combine flour, paprika, thyme, salt, garlic, oregano, onion, black pepper, white pepper, and cayenne in a large bowl and whisk to combine.
  4. Preheat air fryer to 390 degrees.  Drain excess milk from okra and toss in the spice and flour mix to evenly coat.  The okra should look dry and be coated.  Spray okra with olive oil spray.
  5. Place okra in air fryer basked sprayed side down in a single layer. Spray other side with olive oil spray.  Cook in batches if needed.
  6. Air fry for 8 minutes.  Flip over and spray again with olive oil spray.  Air fry another 5-7 minutes. 
  7. Sauce- mix the yogurt, lemon zest, lemon juice, and hot sauce in a small bowl. 
  8. Enjoy!
