Chicken Satay with Peanut Butter Dipping Sauce and Peanut Butter Broccolini

I love peanut butter any time of day. This recipe uses peanut butter in two ways. Both sauces are similar and make the chicken and broccolini flavors pop.

Chicken Satay with Peanut Butter Dipping Sauce

Ingredients:

Dipping Sauce

1/4 cup rice vinegar

1/4 cup creamy peanut butter

1 tablespoon raw honey

2 tablespoons reduced sodium tamari soy sauce

dash red pepper flakes

Chicken Satay

1/4 cup coarsley chopped shallots

1/2 cup canned lite coconut milk

6 cloves garlic pressed

2 tablespoons lime juice

1 tablespoon raw honey

1 tablespoon chopped cilantro

1/4 teaspoon cumin

1/4 teaspoon tumeric

2 pounds chicken tenders

Directions:

  1. Peanut Dipping Sauce- Combine all ingredients in a small bowl. Whisk to blend.
  2. Place shallots, coconut milk, lime juice, honey, cilantro, cumin, and tumeric in a blender. Blend until smooth.
  3. Place chicken in glass baking dish. Cover with marinade and let soak for at least 2 hours.
  4. I grilled my chicken using my ninja grill and cooked chicken for a few minutes on each side. You can broil chicken for 4 minutes on each side or sauté in the marinade until chicken is cooked.

Peanut Butter Broccolini

Ingredients:

2 bunches broccolini

2 tablespoons olive oil

3 tablespoons peanut butter

3 tablespoons reduced sodium soy sauce

2 tablespoons honey

1 tablespoon sesame oil

2 cloves garlic minced

pinch crushed red pepper

2 tablespoons crushed peanuts

1/4 cup fresh cilantro

lime wedges for serving

Directions:

  1. Preheat the oven to 400 degrees.
  2. Lay out broccolini on a baking sheet and drizzle with olive oil. Roast until tender and beginning to brown about 15 minutes.
  3. Add peanut butter, soy sauce, honey, sesame oil, garlic, and crushed red pepper to a bowl and whisk to combine.
  4. Transfer the broccolini to a serving platter and drizzle with the sauce. top with crushed peanuts, cilantro, and lime wedges.
