I am not exaggerating when I tell you this pizza was too die for! This was a quick and easy dinner we will certainly make again.
Ingredients:
2 pounds frozen shrimp (peeled and deveined) thawed
1 refrigerated pizza crust (I prefer thin crust)
4 ounces of butter
zest and juice from 1 lemon
6 cloves garlic
2 tablespoons fresh parsley
1/4 cup grated parmesean
1/4 cup shredded parmesan
Directions:
- Preheat the oven to 450 degrees.
- Line a rimmed baking sheet with aluminum foil.
- Roll out the dough on the baking sheet.
- Add butter, lemon juice and zest, garlic, parsley, and grated parmesan to a food processor. Pulse to mix.
- Spread half of the butter mixture over the crust.
- Arrange the shrimp on top of the crust.
- Sprinkle the remaining butter mixture over the shrimp.
- Sprinkle shredded parmesan over the shrimp.
- Bake for 15-18 minutes.
- Let rest for 5 minutes before slicing.
