Smashed Meatball Burgers
If your family loves meatballs as much as my family does then you will love these burgers!
Recipe adapted from Food Network
Ingredients:
1 large egg
½ cup panko breadcrumbs
¼ cup nonfat milk
¼ cup grated parmesan
2 tablespoons olive oil
½ onion diced
2 garlic cloves
1 pound lean ground turkey or beef
½ teaspoon oregano
1 tablespoon fresh parsley chopped
6 slices mozzarella or provolone cheese
Buns or salad
Marinara sauce and fresh basil for topping
Directions:
- In a large bowl mix egg, breadcrumbs, milk, and parmesan.
- Spray a nonstick pan with olive oil spray. Sauté onion and garlic on medium low heat for 5 minutes. Set aside.
- Add the ground meat to the nonstick pan and break it up to brown. Add the oregano and parsley. Drain the meat. Then fold in the garlic and onion.
- Add the meat mixture to the large bowl and gently mix to combine.
- Divide the mixture into 6 mounds to make large meatballs.
- Heat a large skillet over medium heat. Cook the meatballs for 1-2 minutes per side.
- Gently smash the meatballs to flatten. Then top with a slice of cheese. Cook until cheese melts.
- Serve on a bun or over a bed of spinach. Top with marinara sauce and fresh basil.
