Smashed Meatball Burgers

Smashed Meatball Burgers

If your family loves meatballs as much as my family does then you will love these burgers! 

Recipe adapted from Food Network

Ingredients:

1 large egg

½ cup panko breadcrumbs

¼ cup nonfat milk

¼ cup grated parmesan

2 tablespoons olive oil

½ onion diced

2 garlic cloves

1 pound lean ground turkey or beef

½ teaspoon oregano

1 tablespoon fresh parsley chopped

6 slices mozzarella or provolone cheese

Buns or salad

Marinara sauce and fresh basil for topping

Directions:

  1. In a large bowl mix egg, breadcrumbs, milk, and parmesan.
  2. Spray a nonstick pan with olive oil spray.  Sauté onion and garlic on medium low heat for 5 minutes. Set aside.
  3. Add the ground meat to the nonstick pan and break it up to brown. Add the oregano and parsley.  Drain the meat.  Then fold in the garlic and onion. 
  4. Add the meat mixture to the large bowl and gently mix to combine. 
  5. Divide the mixture into 6 mounds to make large meatballs.
  6. Heat a large skillet over medium heat.  Cook the meatballs for 1-2 minutes per side. 
  7. Gently smash the meatballs to flatten.  Then top with a slice of cheese.  Cook until cheese melts.
  8. Serve on a bun or over a bed of spinach. Top with marinara sauce and fresh basil.
