Turmeric Tofu Pizza
I’m not going to lie the flavors in this pizza are unusual, but if you are looking for something different then I highly recommend you try this recipe. The original recipe used chicken thighs, but I decided to use tofu instead. If you want to use chicken thighs use the same marinade and sauté or grill the chicken thighs before adding to the pizza crust.

Ingredients:
1 block firm tofu
2 teaspoons pumpkin pie spice
1 ½ teaspoons ground turmeric
4 tablespoons olive oil
1 cup spinach
½ bell pepper diced
¼ cup cherry tomatoes halved
¼ cup red onion diced
1 tablespoon fresh cilantro
1/3 cup plain nonfat Greek yogurt
2 tablespoons lemon juice
2 tablespoons honey
Cauliflower pizza crust or naan (See Cauliflower Pizza recipe in Entrees)
Directions:
- Drain the tofu and wrap in paper towels to remove liquid.
- Chop the tofu into 1 inch squares.
- Mix 1 teaspoon turmeric, 2 teaspoons pumpkin pie spice, and 2 tablespoons olive oil in a small bowl.
- Place tofu in a dish. Pour the turmeric mixture over and let it marinate for at least 30 minutes.
- Air fry tofu at 390 for 20 minutes flipping half way through.
- Preheat oven to 350 degrees.
- Layer spinach over cauliflower crust or naan bread. Top with tomato, pepper, onion, tofu.
- Bake 10-15 minutes.
- Meanwhile in a small bowl mix yogurt, lemon juice, ½ teaspoon turmeric.
- Drizzle yogurt mixture over the pizza.
- Optional drizzle honey over the pizza for a touch of sweetness.
