My Grandpa’s Cheesecake Recipe
I grew up eating my grandfather’s cheesecake and his recipe remains my favorite! I made a few slight changes from his recipe to lighten it up a little, but this remains my all-time favorite cheesecake. I feel like I am sitting with my grandfather with every bite.
Ingredients:
Crust-
2 cups graham cracker crumbs
¼ cup extra virgin coconut oil melted
Cheesecake-
Three 8 ounce reduced fat cream cheese at room temperature
5 eggs
½ cup Truvia or 1 cup granulated sugar
1 tablespoon vanilla extract
Topping-
1 pint reduced fat sour cream
½ cup Truvia or 1 cup granulated sugar
1 tablespoon vanilla extract
Directions:
- Preheat the oven to 325 degrees. Prepare a 10 inch spring form pan with baking spray or butter.
- Mix graham cracker crumbs with melted coconut oil. (I used a food processor.)
- Press the crumb mixture onto the bottom of the spring-form pan.
- Beat cream cheese until light and smooth.
- Add eggs one at a time, beating well after each addition.
- Add sugar and vanilla and beat well.
- Pour into the prepared pan and bake for 1 hour 10 minutes or until top is lightly browned and slightly cracked.
- Mix the topping in a medium bowl while the cheesecake bakes.
- Spread the topping over the cheesecake and bake for an additional 10 minutes.
- Cool to room temperature. Then refrigerate overnight.
