Triple Berry Greek Yogurt Popsicles

I was in the mood for a light fruity dessert so when I saw this recipe I knew it would be perfect.  I used blueberries, strawberries, and black raspberries.  You can adjust the fruits to suit your mood.

Ingredients:

½  cup blueberries

½  cup diced strawberries

½ cup black raspberries

3 teaspoons lemon juice

4 tablespoons honey divided

1 ½ plain or vanilla nonfat Greek yogurt

Silicon popsicle molds

Directions:

  1. Add blueberries, 1 teaspoon lemon juice, 1 tablespoon honey to food processor.  Pulse to roughly chop. Transfer berries to a small bowl.
  2. Add strawberries, 1 teaspoon lemon juice, 1 tablespoon honey to food processor.  Pulse to roughly chop. Transfer berries to a small bowl.
  3. Add black raspberries, 1 teaspoon lemon juice, 1 tablespoon honey to food processor.  Pulse to roughly chop. Transfer berries to a small bowl.
  4. Stir together the yogurt and 1 tablespoon honey.  (If using plain yogurt you may want to add ½ teaspoon vanilla extract)
  5. Fill popsicle molds by alternating fruit and yogurt layers.
  6. Freeze until solid.
  7. Run warm water over the mold if needed to remove.  Push from the bottom of the mold and gently push/pull the popsicle out.
  8. Enjoy!
