Triple Berry Greek Yogurt Popsicles
I was in the mood for a light fruity dessert so when I saw this recipe I knew it would be perfect. I used blueberries, strawberries, and black raspberries. You can adjust the fruits to suit your mood.
Ingredients:
½ cup blueberries
½ cup diced strawberries
½ cup black raspberries
3 teaspoons lemon juice
4 tablespoons honey divided
1 ½ plain or vanilla nonfat Greek yogurt
Silicon popsicle molds
Directions:
- Add blueberries, 1 teaspoon lemon juice, 1 tablespoon honey to food processor. Pulse to roughly chop. Transfer berries to a small bowl.
- Add strawberries, 1 teaspoon lemon juice, 1 tablespoon honey to food processor. Pulse to roughly chop. Transfer berries to a small bowl.
- Add black raspberries, 1 teaspoon lemon juice, 1 tablespoon honey to food processor. Pulse to roughly chop. Transfer berries to a small bowl.
- Stir together the yogurt and 1 tablespoon honey. (If using plain yogurt you may want to add ½ teaspoon vanilla extract)
- Fill popsicle molds by alternating fruit and yogurt layers.
- Freeze until solid.
- Run warm water over the mold if needed to remove. Push from the bottom of the mold and gently push/pull the popsicle out.
- Enjoy!
