Tahini Tuna Melt on a Zucchini and Squash Flatbread
I love tuna melts and this tuna melt is loaded with veggies and rich with flavor.
Ingredients:
Flatbread-
1 yellow squash
1 zucchini
1 egg
½ teaspoon cumin
Tuna Salad-
2 tablespoons tahini
5 ounce can tuna
1 garlic clove
2 tablespoons lemon juice
1 teaspoon fresh parsley
1 green onion diced
1 tablespoon diced red onion
¼ cup cherry tomatoes halved
¼ cup bell pepper diced
½ teaspoon cumin
1 slice reduced fat cheddar cheese
Directions:
- Preheat oven to 350 degrees.
- Grate the squash and zucchini and squeeze out extra moisture with a paper towel.
- Add squash and zucchini to a medium bowl. Mix with 1 egg and cumin.
- Line a baking sheet with aluminum foil and spray with olive oil spray.
- Spread the zucchini mixture out in a circle on the baking sheet.
- Bake 15 minutes.
- Use another baking sheet lined with foil to flip the flatbread over.
- Bake 10 more minutes.
- Meanwhile mix tuna, tahini, garlic, lemon juice, parsley, green onion, red onion, bell pepper, tomatoes, and cumin in a medium bowl.
- Spread the tuna mixture over the flatbread.
- Cut the cheese slice into strips. Place strips over the tuna.
- Broil on high for 5 minutes.
