Tahini Tuna Melt on a Zucchini and Squash Flatbread

I love tuna melts and this tuna melt is loaded with veggies and rich with flavor. 

Ingredients:

Flatbread-

1 yellow squash

1 zucchini

1 egg

½ teaspoon cumin

Tuna Salad-

2 tablespoons tahini

5 ounce can tuna

1 garlic clove

2 tablespoons lemon juice

1 teaspoon fresh parsley

1 green onion diced

1 tablespoon diced red onion

¼ cup cherry tomatoes halved

¼ cup bell pepper diced

½ teaspoon cumin

1 slice reduced fat cheddar cheese

Directions:

  1. Preheat oven to 350 degrees.
  2. Grate the squash and zucchini and squeeze out extra moisture with a paper towel.
  3. Add squash and zucchini to a medium bowl.  Mix with 1 egg and cumin.
  4. Line a baking sheet with aluminum foil and spray with olive oil spray.
  5. Spread the zucchini mixture out in a circle on the baking sheet.
  6. Bake 15 minutes.
  7. Use another baking sheet lined with foil to flip the flatbread over.
  8. Bake 10 more minutes.
  9. Meanwhile mix tuna, tahini, garlic, lemon juice, parsley, green onion, red onion, bell pepper, tomatoes, and cumin in a medium bowl.
  10. Spread the tuna mixture over the flatbread. 
  11. Cut the cheese slice into strips.  Place strips over the tuna.
  12. Broil on high for 5 minutes.
  13. Enjoy!
