Lightened up Chocolate Chip Cookies
My husband loves chocolate chip cookies, but occasionally he tries to eat healthier. These cookies use coconut oil and applesauce instead of butter. I also used mostly dark chocolate chips and some semi-sweet chips to lower the sugar.
Ingredients:
1 ½ cups all purpose flour
1 scoop chocolate protein powder
½ teaspoon baking soda
½ teaspoon salt
1 large egg
¼ cup white sugar
½ cup brown sugar
1 tablespoon vanilla extract
½ cup coconut oil melted
1/3 cup unsweetened applesauce
½ cup semi sweet chips
1 cup dark chocolate chips
Directions:
- Preheat oven to 375 degrees.
- Mix dry ingredients in a medium bowl: flour, protein powder, baking soda, salt.
- Beat applesauce, melted coconut oil, sugars, egg, and vanilla extract on medium speed until combined.
- Gently fold in dry mixture.
- Mix to combine.
- Use a small cookier scooper to form balls. Refrigerate dough 15 minutes if too soft.
- Bake for 9 minutes.
- Transfer to a wire rack to cool.
- Hint: Microwave for 15 seconds when eating the next day to get that just baked warm feeling.
